Nigerian Native Jollof Rice

1. Heat oil in a large pot over medium heat. Add onion, garlic, and ginger; sauté until softened.
2. Add cumin, coriander, turmeric, paprika, salt, and pepper; stir for 1 minute.
3. Add rice; stir to coat with spice mixture.
4. Add water, bay leaves, tomato paste, broth, tomatoes, and Scotch bonnet peppers (if using). Stir well.
5. Bring to a boil, then reduce heat to low, cover, and simmer for 20-25 minutes or until rice is cooked and liquid is absorbed.
6. Serve hot, garnished with chopped fresh parsley or scallions (optional).
