Nigerian Native Jollof Rice

A classic West African dish! Here's a recipe for Nigerian Native Jollof Rice:
Ingredients:
- 1 cup uncooked long-grain rice
- 2 cups water
- 2 tablespoons vegetable oil
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon grated ginger
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon turmeric
- 1/2 teaspoon paprika
- Salt and black pepper, to taste
- 2 bay leaves
- 2 tablespoons tomato paste
- 2 cups beef or chicken broth
- 2 cups chopped fresh tomatoes (or 1 can of diced tomatoes)
- 2 Scotch bonnet peppers (optional), chopped (use gloves when handling)
