Mini Turtle Cheesecakes

Preheat the Oven:
Preheat your oven to 325°F (163°C). Line a muffin tin with paper liners.
Prepare the Crust:
In a medium bowl, mix together the graham cracker crumbs, sugar, and melted butter until well combined.
Divide the mixture evenly among the muffin cups and press firmly into the bottom to form a crust.
Prepare the Cheesecake Filling:
In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth.
Add the sugar and mix until well combined.
Add the eggs one at a time, mixing well after each addition.
Mix in the vanilla extract and sour cream until smooth and creamy.
Fill the Muffin Cups:
Spoon the cheesecake filling over the crusts, filling each cup nearly to the top.
Bake the Cheesecakes:
Bake in the preheated oven for 20-25 minutes, or until the centers are set.
Remove from the oven and allow the cheesecakes to cool in the pan for about 10 minutes.
Transfer the cheesecakes to a wire rack to cool completely, then refrigerate for at least 2 hours, or until fully chilled.
Add the Toppings:
Once the cheesecakes are chilled, remove the paper liners.
Drizzle each cheesecake with caramel sauce and chocolate sauce.
Sprinkle chopped pecans on top.
Add a dollop of whipped cream, if desired.
Serve and Enjoy:
