Ingredients:
• 1 Chicken breast, large
• 1/2 Avocado
• 1/2 cup Cherry tomatoes
• 2 tbsp Cilantro, chopped
• 2 Garlic cloves, minced
• 1/4 tsp Ginger powder
• Zest of 1 Lime
• 1/4 tsp Onion powder
• 3/4 cup Fresh pineapple pieces
• 1/2 Red onion, thinly sliced
• 4 cups Romaine lettuce, chopped
• 1/3 cup Light coconut milk
• 1/2 tsp Honey
• 1 1/2 tbsp Lime juice
• 1 tbsp Tamari sauce (gluten-free soy sauce)
• 1 1/2 cups Cooked quinoa
• Black pepper, to taste
• 1/4 tsp Paprika
• 1/2 tsp Salt
• 3 tbsp Olive oil
• 1/4 tsp Cumin
• 1/4 cup Fresh pineapple juice
