Feta and Zucchini Muffins

- Zucchini shreds should come out to about 2 cups shredded. Do not squeeze them dry; we want them with their liquids.
- Oat flour or gluten-free flour can be substituted for the all-purpose flour, one to one.
- For almond flour, follow the ingredients listed below:
- 2 ½ cups Almond Flour
- 2 teaspoons Baking Powder
- 1 ½ teaspoons Salt
- 3 eggs
- Melted butter can be substituted for the olive oil, which gives them a more biscuity vibe.
