Feta and Zucchini Muffins

1. Preheat the oven to 375°F. Line or spray your muffin trays.
2. In a large bowl, whisk together the flour, baking powder, salt, and sugar.
3. In a medium bowl, lightly beat the eggs. Then whisk in the milk and oil. Pour this mixture into the dry ingredients bowl and mix until just combined.
4. Fold in the grated zucchini, crumbled feta, shredded mozzarella, and chives.
5. Bake for 22-25 minutes or until golden and a toothpick inserted into the center comes out clean. Allow to cool. These muffins serve great with soup or eggs.
6. Note:There is no need to squeeze the liquid from the zucchini; we need it in this recipe.
