Beef Roast with Potatoes

- Season the beef roast with salt, pepper, paprika, thyme, and rosemary.
- In a large skillet, heat olive oil over medium-high heat. Sear the beef on all sides until browned. Remove the beef from the skillet and set aside.

- In the same skillet, add the onion and garlic, and cook until slightly golden.
- Arrange the potato chunks in a large roasting pan or ovenproof dish.
3. **Roast in the Oven:**
- Place the beef roast on top of the potatoes.
- Pour the beef broth around the roast.
- Cover the pan with aluminum foil or a lid.
- Roast in the oven for about 2 hours, or until the beef is tender and the potatoes are cooked through. (Cooking time may vary depending on the size of the roast.)
