Baked Sweet and Sour Chicken

1. First things first, preheat your oven to 325F. Prep a 13 x 9-inch pan with some parchment paper and set it aside for later.
2. Now, let's give our chicken a little seasoning. Sprinkle with salt and pepper to enhance the flavor.
3. Next, grab a large ziploc bag, pop in your cornstarch and chicken. Shake it all up and make sure your chicken pieces get a nice, even coating.
4. Get a shallow bowl and beat your eggs together. Heat up your oil in a skillet over medium-high heat until it's sizzling hot.
