Step 1:

Preheat your oven to 350°F (175°C). Prep the ingredients by chopping the corned beef, shredding the Swiss cheese, and draining/pressing the sauerkraut to remove excess moisture.

Step 2:

In a large mixing bowl, combine the chopped corned beef, shredded Swiss cheese, well-drained sauerkraut, mayonnaise, and Thousand Island dressing. Mix thoroughly until all the ingredients are well incorporated.

Step 3:

Spread the mixture evenly into an 8x8 inch baking dish, ensuring it is level for even cooking.

Step 4:

Bake in the preheated oven for 30 minutes or until the dip is hot, bubbly, and golden brown on top.

Step 5:

Once baked, remove from the oven and garnish with freshly chopped parsley for a pop of color and freshness.

Step 6:

Serve the Reuben Dip warm with rye chips, crackers, or your favorite dippers.

Serving and Storage Tips

Serve the Reuben Dip hot and bubbly straight from the oven for the best flavor and texture.

Pair with rye chips, crackers, toasted baguette slices, or fresh vegetables like celery and carrot sticks.

To store leftovers, place them in an airtight container and refrigerate for up to 3-4 days. Reheat in the oven at 350°F until warmed through or microwave in 30-second intervals, stirring in between.

If you need to prepare the dip ahead of time, assemble it and store it in the fridge for up to a day before baking. Let it come to room temperature before placing it in the oven.
