Easy Lemon Zucchini Bread

1. Preheat and Prepare: Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan and set aside.

2. Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.

3. Wet Ingredients: In a large bowl, beat the sugar, eggs, and oil until well combined. Add the lemon juice, lemon zest, and vanilla extract, mixing well.

4. Combine: Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

5. Fold: Gently fold in the grated zucchini and Greek yogurt until evenly distributed.

6. Bake: Pour the batter into the prepared loaf pan and smooth the top. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.

7. Cool: Let the bread cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.
