Apple Caramel Pecan Cobbler

Over low heat, melt the butter, stir in the brown sugar and milk. Whisk to combine. Increase heat to a medium low, bring to a low boil and cook for 10 minutes, stirring constantly. Remove from heat, and the vanilla, and stir. Let caramel cool for 10 minutes.

 

Pour over apple mixture and stir (save a small amount to drizzle over the top.) You might have to re-heat the caramel sauce slightly to pour. Pour apple mixture into a 9 x 13 baking dish that has been sprayed with non-stick cooking spray.
