- 1-2 chipotle peppers in adobo sauce
- 4 cloves garlic
- 1 tablespoon ground cumin
- 1 tablespoon dried oregano
- 1 tablespoon chili powder
- ¼ teaspoon ground cloves
- 1 4-pound boneless beef chuck roast, excess fat trimmed and cut into 6 pieces
- Kosher salt and freshly ground black pepper, to taste
- 1 ½ tablespoons canola oil
- 1 cup beer, such as Modelo
