Chewy golden syrup cookies

  1. Preheat oven to 170C. Line two oven trays with baking paper.
  2. Place butter, brown sugar and golden syrup in a saucepan and stir over gentle heat until melted and smooth.

    How to make butter.
  3. In a large bowl, combine flour, oats and bicarb soda. Add butter mixture and mix to combine.
  4. Place dessert spoon size balls of mixture onto prepared baking paper, leaving plenty of space for spreading. Bake for 8-10 minutes.
  5. Allow to cool on the tray, then remove to a cooling rack and drizzle with extra golden syrup.

NOTES

These cookies are very soft when they come out of the oven so don’t try to move them from the tray until they’ve cooled and firmed up a little.
