Cheesy Ranch Potatoes and Sausage

Ingredients:

  • 1 lb smoked sausage, sliced
  • 2 bell peppers, sliced
  • 1 onion, diced
  • 1 regular size bag of frozen shredded hash browns
  • 3/4 cup heavy whipping cream
  • 1 can cheddar cheese soup
  • 1/2 cup sour cream
  • 1 packet ranch seasoning
  • 1 cup shredded cheese

Instructions:

  1. Sauté the sliced smoked sausage, sliced bell peppers, and diced onion in a hot pan until they are slightly caramelized and fragrant.
  2. Transfer the sautéed meat mixture to a crockpot. Add the frozen shredded hash browns, heavy whipping cream, cheddar cheese soup, sour cream, ranch seasoning packet, and shredded cheese to the crockpot. Stir well to combine.
  3. Cook on high for 2 hours or low for 4 hours, until the potatoes are tender and the flavors are well combined.
  4. Serve hot and enjoy!

*Note: You can skip the sautéing step for the sausage, bell peppers, and onion, but it adds extra flavor to the dish.
