The Best Goulash

Heat the oil in a large pot over medium-high heat. Add the beef and brown on all sides. Remove the beef from the pot and set aside.
Add the onion and garlic to the pot and sauté until softened.
Stir in the paprika, caraway seeds, salt, and pepper, and cook for 1 minute.
Return the beef to the pot and pour in the beef broth and diced tomatoes. Bring the mixture to a boil, then reduce the heat to low and simmer for 1 1/2 hours, or until the beef is tender.
Add the potatoes, carrots, and peas, and continue to simmer for another 30 minutes, or until the vegetables are tender.
Serve with egg noodles, spaetzle or bread dumplings
