Chicken drumsticks

Clean the chicken drumsticks with lukewarm water and a little vinegar.

In a pressure cooker, pour the peeled onion and garlic. Then add the carrot slices, thyme and bay leaf.
Season lightly with salt and pepper then brown everything until the bottom browns slightly.

Pour in the drumsticks, add the broth and pour the water up to the height of the chicken drumsticks.

Close the pressure cooker and cook for 40 to 45 minutes.
You should get tender drumsticks that come off the bone.

Meanwhile, cook the potatoes in water without removing the skin.

Once the drumsticks and potatoes are cooked, let cool.

Remove all the bones, the thyme sprig and the bay leaf. Then, shred the chicken meat.

In a salad bowl, collect the flesh, onions and carrots. Get rid of the juice in the pressure cooker.

Remove the skin from the potatoes and mash them with a fork. You should obtain a compact puree.

Pour in all the spices including the flour. Also add the chopped coriander, egg yolk and grated cheese.

Mix everything by hand.

Clean the bones of the chicken drumsticks and place the stuffing on top. Shape with your fingers, pressing firmly to obtain small thighs.

Place the drumsticks on a dish lined with parchment paper. Reserve 30 minutes in the freezer.

Breading

Mix the cereals (or rusks). Reserve your breadcrumbs.

Mix the yogurt, milk, egg white, paprika, dried parsley and olive oil in a large bowl.

Dip the drumsticks in the yogurt mixture then tap to remove the excess. Then dip them in the breadcrumbs.

Heat your frying. Be careful that it is not too hot. It’s up to you to test with a pestle. Do not hesitate to readjust the temperature if necessary.

Cook the chicken nuggets until the breading browns.
Enjoy with vegetables or a large green salad.
