Meringue cake with raspberries is a delicious, sweet dessert perfect for summer. Coconut, meringue tops and raspberries. The whole thing is light, fluffy and delicate in taste.

The meringue tops are with the addition of coconut flakes, thanks to which we obtain a beautiful aroma and even better taste. We bake them in a traditional way so that they are crispy on the outside and slightly foamy on the inside.

Raspberry cream is the opposite of the very sweet meringue. Raspberries, cream and mascarpone. I did not add powdered sugar to the cream, which made the cream slightly sour and fit the meringue perfectly. The whole thing is not bland, but rather light and refreshing.

Meringue cake with raspberries is a perfect summer dessert with lots of fruit. You can divide the entire preparation process into two parts. The day before, bake the meringue, let it cool and keep it in the oven with the door closed. The next day, make the cream and arrange the tops. A simple and delicious cake.
