Poppy seed cake

1 cup of powdered sugar
a spoonful of lemon juice
2 – 3 tablespoons of water

ADDITIONALLY

1/4 cup poppy seeds for decoration
100 g of orange peel

PREPARATION:

1 cup = 250 ml.

Homemade poppy seed mass can be replaced with ready-made canned mass. Take a look at the description above and learn how to make the recipe.

Sift the flour into a bowl and add salt. Dissolve fresh or dry yeast in warm milk with a teaspoon of sugar. Leave to rise for approx. 5 – 10 minutes. Grind the yolks with sugar until light and fluffy. Add it to the flour together with the leaven and start kneading the dough, adding a little melted butter and oil every now and then (knead for about 8 – 10 minutes). Then put it in a large bowl, cover with foil and leave for 1 – 1.5 hours. until risen.

In the meantime, prepare the poppy seed mass. Pour hot water over dry ground poppy seeds, leave for 5 minutes and drain excess water using a strainer. Pour boiling water over the poppy seeds (2-3 cm above the level of the poppy seeds) and cook for about 20 minutes. Drain excess liquid in a strainer and leave to cool. The poppy seeds for the mass should be well drained (too much water in the poppy seeds will make the mass thinner). Then grind it twice in a grinder or use a food processor. Add the rest of the ingredients and stiffly beaten egg whites with a pinch of salt to the mixture and mix gently.

After rising, divide the dough into two equal parts and roll it out on a board lightly sprinkled with flour. The pancakes should be approximately 2 – 3 mm thick (see the photos below). Spread the poppy seed mixture and leave about 2 cm on each edge. Roll it up quite tightly like a roulade, then tuck the sides underneath. Wrap the poppy seed cake in two layers of baking paper (this will prevent the poppy seed cake from growing to the sides), leaving about 1 cm of free space inside. Place on a baking tray and bake at 180ºC for approx. 30-40 minutes until the top is golden brown. Remove the poppy seed cake from

the paper and leave it to cool.
Sift the powdered sugar into a bowl and add the rest of the ingredients. Mix thoroughly (if it is too thick, add more water) and spread on top of the poppy seeds. Decorate with dry poppy seeds and orange peel.
