Cheese dumplings

2 teaspoons of vanilla sugar
2 teaspoons of baking soda
2 tablespoons of lemon juice
500 g of cake flour

ADDITIONALLY

oil for frying, e.g. rapeseed
powdered sugar, icing or fine sugar for coating

PREPARATION:

*instead of cottage cheese, you can use ground semi-skimmed cottage cheese

All ingredients should be at room temperature.
Sift the flour into a bowl along with baking soda. Then add the remaining ingredients and knead into a uniform dough (the dough may be a bit sticky to your hands). Sprinkle the pastry board generously with flour and roll out the dough to a thickness of approx. 1.5 – 2 cm. Cut out circles with a diameter of 9 cm with a glass or a mold and cut out circles in the center with a small glass or a mold with a diameter of approx. 4 cm. Fry in hot oil on both sides until golden brown. Drain excess fat on a kitchen towel. While still warm, roll in powdered sugar, fine sugar or icing.
