Today, I’m unveiling this culinary treasure, a delicious avocado salad that brings together the richness of avocado with the crisp freshness of vegetables, all tied together with a creamy avocado sauce that’s simply out of this world.
Ingredients for the Salad:
- 1 ripe avocado
- 150 grams of fresh spinach
- 1 red paprika (bell pepper), diced
- 1 carrot, peeled into ribbons with a potato peeler
- 200 grams of canned corn, drained
- 1 cucumber, diced
For the Avocado Sauce:
- The flesh of 1 ripe avocado
- 3 tablespoons of yogurt
- 3 tablespoons of extra virgin olive oil
- 3 tablespoons of water (adjust for desired consistency)
- 2 cloves of garlic, minced
- Juice of 1/2 a lemon
- Salt and black pepper to taste
