Homemade chicken taquitos

If using corn tortillas, you may need to soften them before rolling.

You can do this by wrapping them in a damp paper towel and microwaving for about 20-30 seconds. If using flour tortillas, they are usually pliable enough as is. Fill and Roll: Place a spoonful of the chicken mixture along the bottom edge of a tortilla. Roll the tortilla tightly around the filling, then place it seam side down on a baking sheet lined with parchment paper or aluminum foil. Repeat with the remaining tortillas and filling.

Bake the Taquitos: Lightly brush the tops of the taquitos with cooking spray or oil. This will help them crisp up in the oven. Alternatively, you can lightly fry them in oil for a crispier texture. Bake in the preheated oven for 15-20 minutes, or until the taquitos are golden and crispy.

Serve: Once the taquitos are done, remove them from the oven and let them cool for a few minutes. Serve them with your favorite dipping sauces such as salsa, guacamole, sour cream, or ranch dressing. Enjoy your homemade chicken taquitos as a delicious appetizer, snack, or even a main course!
